THE BRIEF
Mosimann's held a catering contract with the Royal Palaces to provide hospitality for Royal dinners, lunches and receptions at Windsor Castle and St James's Palace. Cube was appointed to supply the waiting staff for these events on a regular, ongoing basis.
The brief was clear and uncompromising. Staff needed to be experienced, confident serving Royalty and their guests, impeccable in their presentation and grooming and completely reliable in their attendance. Events required between 12 and 18 waiting staff depending on the occasion. Security clearance was mandatory for every member of the team. Detailed personal information had to be submitted for each individual several days before every event. Once the security data was submitted, no additions could be made. If someone dropped out at short notice, the replacement had to come from a pre-cleared pool. There was no other option.
Punctuality was not simply expected. It was a condition of entry. Staff who did not arrive before a specific time could not enter the palace. The event would proceed without them.
